This is a Dinner I loved as a child! My mother made it typically during Lent! Start with 3 chopped Onions and 3 Cloves of Garlic. Saute in Olive Oil and sprinkle in some fine ground Black Pepper. When they are translucent add in a can of 6 ounce paste. Stir into the onions and garlic. Add in 24 ounces of water. Stir and let the water get hot. The water will thicken from the paste. Add in some Sea Salt and 5 Basil leaves. Let this cook down for a half hour or so. After a half hour add in Two 5 ounce cans of Tuna Fish, preferably in Olive Oil or you can use the Star Kist Fancy White Albacore. This only needs to cook in the sauce about 20 minutes. Once the Tuna is cooking in the Sauce start boiling your water for the Penne. Cook the Penne until Al Dente. Strain the Penne and add some Extra Virgin Olive Oil on the Pasta. Make sure you coat the Penne by Shaking it in your Pot to ensure it is coated. You do not want too much Olive oil just enough to flavor and keep it from sticking together. Add the Sauce on top of the Penne. Sprinkle on some Parmigiano Reggiano cheese, garnish with some fresh Basil and it is ready to be served! Buon Appetito!
